I DESPERATELY NEED YOUR SWEET POTATO AND MARSHMALLOW RECIPE!!!

 

Holy shitcakes. My hubby is down for the count with the flu and I have to cook Thanksgiving dinner. Now, you may ask yourself–doesn’t she have a cookbook out? Why would cooking Thanksgiving dinner be scary? Well, IT IS!!! I’M FREAKING OUT PEOPLE!! ;)

This is me right now.
HELP!!

Here’s what I’m going to make:

  1. Turkey–kill me…the only time I ever made poultry before I almost killed everyone with food poisoning
  2. Cheesy taters–I got this one nailed, and the recipe is in the book so you can have it too!
  3. Green bean casserole–how hard can it be? Right?
  4. Sweet potato and marshmallow casserole–I NEED YOUR HELP!!! I need THE EASIEST recipe on earth. If you have one, will you please post it? Pretty please??
  5. Stuffing–mom is making this–whew! (recipe in the book)
  6. Strawberry angel food cake delight–a blind cat could make this. (recipe in the book too)

I’ve not cooked this much on one day EVER in my life, and I’m more than a bit nervous. Any help you can be with a sweet potato marshmallow casserole recipe (that is ridiculously easy) would be awesome!!! THANK YOU!!!

  1. Can’t give you a recipe for the sweet potatoes. All I can offer is advice: DO NOT stuff the cavity of the turkey! If you have to do the neck part instead. I’m sure your hubby knows that, already. Just sayin’

  2. I just pulled a southern recipe off of a can of yams, here you go sweetness
    1-29 oz can cut yams
    1/4 cup brown sugar
    1/2 tsp salt
    1 tsp cinnamon
    1 tbsp nutmeg
    1 tbsp melted butter
    1/4 cup cream (1/2 and 1/2 will do)
    16 marshmallows

    Set oven to 350 and you can mash the yams or leave them whole. I prefer to leave them whole. In a bowl mix yams and all other ingredients except marshmallows. Stir gently if the yams are whole, blend well if mashed. In glas pyrex dish (ungreased) pur yam mix and top with marshmallows. Bake approximately 20 minutes until marshmallows are lightly browned. DON”t overcook, LOL :)

  3. Green Bean Casserole.
    1 10 3/4 oz size can cream of mushroom soup
    1 cup milk
    2 tsp soy sauce
    1/4 tsp pepper
    1 bag frozen green beans
    2 2/3 cup French Fried Onions
    1/4 onion diced
    fresh sliced shrooms and 1/4 lb of cooked bacon

    preheat oven to 350. in pan heat together all ingredients except french fried onions and beans. Until just mixed and heated. Place thawed green beans in 3 qt Pyrex dish. Pour mix over the top of green beans and stir.Bake 25 minutes. Pull out of oven and top with remaining french fried onions. Cook 5 minutes more voila. This is my own recipe the bacon and diced onion is optional. Peace Jaz

    • The bacon needs to be precooked until the fat is glossy and almost clear. The easiest way to do this is take the bacon and cut up into 1/4 inch bite size pieces and cook in a skillet over med-high until just cooked through. Not crisp unless you like it crunchy. When cut up like this it doesn’t take but about 7- 10 minutes over med-high. If you do the yams and green bean casserole prep while the turkey is cooking then all you need to do is refrigerate until you are ready to put them in the oven.

  4. oh yeah and when you pour the mix over the green beans stir in the 2 2/3 cup of french fried onions at that time and save the rest for the top, sorry. :)

  5. Jaz’s recipe sounds fine if you have canned yams – but what if hubby already bought fresh ones? Here’s what to do with those babies:

    Sweet potatoes and marshmallows (starting with fresh yams) -

    (NOTE: This might look scary because of the length. Fear not – I just have a chatty recipe writing style. Also I like to try to cover contingencies.
    Short form: Boil those yams till they’re soft, let them cool, peel them, mash them up with a bit of orange juice, put ‘em in a pan, scatter marshmallows on top, bake till the marshmallows brown.)

    A bunch of yams – depending on how much your family likes this stuff, 1/2 to 1 big yam per person who will be there
    1/4 – 1/3 c orange juice
    bag of miniature marshmallows

    Cut the yams in chunks as needed to fit in the pot you have available. (Cut the pointy ends off and throw them away if the yams don’t want to fit.) Don’t peel them yet – that’s much easier after they’re cooked.

    Add enough water to come to within two inches of the top of the pot. Boil for about an hour, until a fork goes all the way into the yams easily. They’ll cook a little faster if you partly cover the pot with a lid. Keep an eye on them and add hot water if it’s getting low.

    You can cook the yams in the morning – they’re going to get reheated anyhow.

    It gets easier from here. Really.

    Once the yams are cool enough to handle, peel them. Now it’s a question of what tools you own. Do you have a big strong mixer? Great. Put the yams and orange juice in the mixer bowl and run on medium speed until they’re reasonably smooth.

    No mixer, or a wimpy little one like mine? You might have a potato masher or a ricer to squash them into submission – if not, use a fork (works better for this than a spoon).

    Once you have the yam and orange juice mixture fairly smooth, spoon it into a buttered baking dish and scatter marshmallows over the top. Bake at about 350 degrees for twenty minutes or so until the marshmallows brown lightly. Enjoy.

      • Aw, thank you!! Believe me, I’ve been through the Thanksgiving nerves – as long as the turkey is cooked through, you’ll be fine. And if it does turn out to be, um, raw inside – I’ve managed to do that a time or two – well, hack it into pieces (so it will cook faster) and stick them back in the oven for another half hour, and pour everybody another glass of wine or whatever the house beverage of the day may be! And feel proud of yourself for contributing another story to the family folklore.

      • I love the idea of just pouring more Drink o’the Day down their gullets. GREAT IDEA!! :) Because everyone is sick, we’ve postponed Thanksgiving to Saturday. Whew! And since my mom knows that I must be in a massive state of panic, she offered to cook the turkey. YAY!!! Happiness. God bless an awesome mommy!

  6. On the turkey it’s 20 minutes per pound at 325. Cook in a roaster on the rack. breast side up. Take the weight of the turkey rounded up ( a turkey weighing 12.45 lbs would be 12.5 x 20 divided by 60 giving you a cook time of 4 hours 15 minutes) multiply by 20 and divide by 60, that will give you your approximate cook time. Thermometer should reach 165 degrees. To be sure check the legs, they should pull away from the turkey easy if not actually pulling away. If the top is browning too fast put foil over the breast. Check the turkey at least once and hour until about 1/2 hour before it should be done. If it is un-stuffed it will cook way faster so you need to check it every 20 minutes with in an hour of it being done. Go out and get a thermometer, it’s a good $5 investment for a standard thermometer, and to take the temp put it into the fattest part of the leg, and then check the temp in one breast, but don’t touch any bones, that will give you an inaccurate reading. Save the drippings for the gravy.

  7. Jodi, I used to cook professionally in restaurants. Don’t get intimidated. It’s all about timing. Start with your eating time. If it’s 2 pm you should plan on starting your turkey 3-4 hours in advance of eating time depending on weight. When the turkey is done pull it and tent it loosely with foil let it rest for 10 min. Turn oven up to 350 and put both the yams and green bean casserole in the oven and set timer for 10 minutes. After 10 minutes reset the timer for 10 minutes and start carving the turkey. By the time you get ready to serve the turkey the casserole and yams will be ready to come out of the oven.

    The turkey comes out perfect. Always give it plenty of time to rest after coming out of the oven. Finish making your sides while the turkey rests. Even if you let it rest for an hour, it will be fine.

    Then after carving the turkey, ladle some warm chicken or turkey broth over it, and it will be the right temperature to eat.

    One large box of Lucky Charms
    One blender

    Peel and cut up sweet potatoes, empty the box of Lucky Charms onto the kitchen counter and sort out all the marshmallows. You should find hearts, clovers, horseshoes, stars, maybe some other shapes that they’ve added. Feed the leftover gross cardboardy pieces to the birds out side. Put all the cut potatoes and the lucky charms marshmallows into the blender and blend on high. Pour mixture into a baking dish and bake for 30 minutes at 350 degrees.

    It will be magically delicious!

    Okay don’t really do this… but Happy Thanksgiving anyhow!

Put the marshmallows into the blender. Blend it all up. Pour into a baking dish and bake for 30 minutes at 350 degrees.

I’d be lost without all of you!! :) Thank God mom offered to cook the turkey and we’re moving Thanksgiving to Saturday since every last one of us is under the weather.   12. Sounds like you got some good recipes through the grapevine…. Hope it all turns out. We got an “after thanksgiving” casserole idea we’re gonna try making Friday…

    Mash Sweet Potatoes (removing marshmallows from top before hand (or leave in if desire). Put Mashed Swt Potatoes in bottom of casserole pan

    Cover Mashed Sweet Potato with layer of Turkey

    Cover Turkey with layer of Cranberry-Orange (or Orange-Cranberry) Sauce

    cover above sauce with layer of Stuffing

    Cover with tin foil (helps keep top & edges from burning). Place in oven at ohhh say 350 and cook till warm/hot – Simple and Easy!! :-)

    Everything should be precooked from T. Giving Turkey Dinner so basically heating it up (no risk of food poisoning due to undercooked Turkey (unless of course people have already keeled over already from under cooked Turkey on T.Day. :-P

Thank God my mom offered to make the turkey, so all I have to make are the cheesy taters, sweet tater casserole, green bean casserole and dessert.   13. I’m not sure I should say this out loud here – but simple tradition at our house. It’s just the two of us and we’re both diabetic. We both love pizza and only have it once a year – and yep – you guessed it – on Thanksgiving. Our friends have a hard time understanding why it is we don’t want to join them and their families–but we love our tradition of pizza and two pies–one sugar free pumpkin and the other sugar free fresh strawberry. Hope your day is fab from top to bottom and I know everything will taste just the way you want.

    • I think your tradition is SUPERB!!!!! Good for you!! The best part of Thanksgiving is doing what you love with the people you love. It sounds like that is exactly what you two do. :)

      While I’m not diabetic, I do have sugar issues, so I have to be super careful about eating too much sugar. I’ll take one small bite of the sweet potato casserole and not be able to eat anymore of it for hours. But darnit, I will learn to make it well for everyone else if it’s the last thing I do!
